1/2 Cup finely chopped onion
1/2 tbsp olive oil
1 cup vegetable stock

1 tsp tomato paste
1 tsp maple syrup

1 pinch paprika
1 bay leaf

In a small saucepan, heat olive oil at medium intensity and add bay leaf and cook 1 minute.
Add everything else but onions and cornstarch, cook for another minute. |
| Cook onion until it’s transparent, about 3-4 minutes. | |
| Add cornstarch last, and mix using a whisk. | |
| Bring to a boil, stirring constantly. | |
| Lower heat and allow to simmer for 5-10 minutes. | |
| Remove from heat and filter sauce through a sieve (or not). |
